  1. 1x can chickpeas, drained
  2. 3x stalks of celery, finely chopped
  3. ½ avocado
  4. 2 tablespoons of vegan mayonnaise (B-Well canola mayo from Pick n Pay)
  5. 2 tablespoons of lemon juice
  6. Salt & pepper
  7. 1 – 2 Lettuce leaves
  8. 1 – 2 slices of vegan bread (Sasko, Albany, Woolworth’s)
  9. Fresh garnish (herbs / carrot julienne / sprouts)
  1. Mash up the chickpeas with a fork or potato masher until you reach a chunky consistency
  2. Add the chopped celery, mayonnaise, lemon juice, avocado and mix.
  3. Season with salt and pepper according to taste
  4. Toast your slice(s) of bread
  5. Once toasted, lay down your lettuce and spread your filling over the leaves
  6. Close your sarmie with another slice of toasted bread or garnish and enjoy an open-sarmie
