  1. 125 grams Happy Earth People chickpea pasta
  2. 1 can of coconut milk
  3. 2 teaspoons organic veggie stock
  4. 1 teaspoon organic turmeric powder
  5. 1 teaspoon garlic powder
  6. 1/2 a teaspoon finely ground black pepper
  7. 1 tablespoon of fresh parsley
  8. Fresh coriander to serve (optional, but delicious!)
  9. Salt & freshly ground black pepper to season
  1. Cook Happy Earth People chickpea pasta according to instructions – don’t forget to use a timer to avoid over cooking. Keep about a tablespoon of cooking water.
  2. Pour coconut milk into a saucepan
  3. Add all the spices.
  4. Mix well and bring to a boil.
  5. Turn down to a simmer, then add fresh parsley.
  6. Let simmer to thicken the sauce for 15-30 minutes – the longer it simmers, the stronger the flavour and the thicker the sauce.
  7. Coat pasta with the sauce, adding the cooking water where necessary (to preferred consistency) and top with fresh coriander.
