Seasonal Veg Stir Fry with Rice

Ingredients
  1. 1 red pepper
  2. 1 green pepper
  3. 1 yellow pepper
  4. 1-2 green cayenne chilli
  5. 1 garlic clove
  6. spring onion bunch
  7. 1 Head of broccoli
  8. 1 Red onion
  9. 1 Piece of ginger, cut into matchsticks
  10. 2 Tbs soy sauce
  11. Salt and freshly ground pepper
  12. Olive Oil
Instructions
  1. If you have a wok, great! If not use a large pan. Place it over high heat with some olive oil and toss in the ginger matchsticks with the garlic and allow to become fragrant and soften slightly (mind the heat of the pan here!). Then add chopped chilli and onion and stir fry a minute or two.
  2. Add the rest of the roughly chopped veggies and toss together with the soy sauce (you can add a splash of water here). Season with salt and pepper and stir fry for 3-5 minutes on high heat. Aim for crispy veggies!
  3. Serve with your choice of rice or noodles. (Add sweet and sour sauce if your preference!)
