Black Bean and Sweet Potato Burrito

Ingredients
  

  • 8 Flour tortilla
  • 2 Cups Black beans
  • 2 Cups Sweet potatoes cooked tender (cut into small cubes)
  • ½ Teaspoon Cumin
  • ½ Cup Red bell pepper (diced small)
  • ½ Cup Green bell pepper (diced small)
  • 1 Tablespoon Fresh garlic
  • 1 Tablespoon Chili powder
  • 1 Cup Red onion (diced small)

Instructions
 

  • Sweat onions, garlic and peppers in a pan.
  • Add black beans, sweet potatoes, cumin, and chili powder.
  • To serve, portion ½ cup on each tortilla and roll up.
