Ingredients
  1. 2 x Onions
  2. 1 x Tomato
  3. 2 x Cloves Garlic
  4. 2 x Green Chilli
  5. 1 teaspoon Freshly chopped ginger
  6. 1 teaspoon nigella (onion seeds)
  7. 1 teaspoon coriander seeds
  8. 1 teaspoon Garan Masala Powder
  9. 1 teaspoon curry paste
  10. 1 teaspoon chili powder
  11. 1 teaspoon turmeric powder
  12. 1 Bay Leaf
  13. 1 Cup mixed lentils
  14. 1 x Carrot
  15. 2 x Sweet potato
  16. 4 x cardamon seeds
  17. 1 x 400ml Coconut Milk
  18. Oil (to fry veggies in pan)
Instructions
  1. 1/4 Cup oil in pan until hot.
  2. Finely chop onions, ginger, garlic, tomato, carrot, sweet potato and fresh chilies, fry in pan.
  3. Once mixed, add curry paste, all spices and mixed lentils.
  4. Combine all ingredients well and add 1/2 cup water, reduce heat to low until ingredients are tender.
  5. Add coconut milk and simmer.
Notes
  1. Garnish with fresh coriander and serve with roti, rice or enjoy curry on it's own.
  2. Optional: Add a simple fresh salsa of chopped onions, tomatoes and coriander
